Meal Box: Sweet Chilli Chicken with Udon Noodles and Fish cakes includes:

1 x Frozen Raw Chicken Breast (2 kg)
1 x Fresh Udon Noodles (5 Pack)
1 x Mae Ploy Sweet Chilli Sauce 730ml
1 x Green Pepper
1 x Extra Large White Onion
1 Bunch of Spring Onions (Garnish) 
1 x Large Bulb of Garlic
1 x Lemon
2 x Long Red Chillies 
1 x Thai Fish Cakes 200g (10 pieces)

BEFOOD Sweet Chilli Chicken Stir Fry with Udon Noodles – For 4 People

Pre-Prep:·        Take 4 – 5 Frozen Chicken Breasts and Defrost (3 Hours) slice into either chunks or strips, dependant on preference.
·        Slice all the Spring Onions as they will garnish your Thai Fish Cake Starter and your Main Dish.
·        Slice your Carrot into thin long strips and Onions into strips (thin or thick depending on how much crunch you want from them)

For the Starter:·        Shallow Fry your Thai Fish Cakes in Vegetable or Sunflower Oil for 12 minutes, turning regularly, or alternatively, lightly coat with oil and oven bake for 18-20 minutes. Sprinkle with ¼ of your sliced spring onion and serve will Sweet Chilli Dipping Sauce, Delicious!!

For the Stir Fry Main:·        Slice your chicken breast into either strips or chunks, personal preference!
1.   Decadent Version-
Lightly coat in egg and flour (see video) and deep fry. Dry off on paper towel in preparation for sauce. Coat with toasted sesame seeds after sauce if you have them.
2.   Healthy Version-
Lightly coat in cornflour and put to one side. OR simply cook without a coating.·        Add 5 tablespoons of vegetable or sunflower oil to a large and deep hot frying pan.
·        Take 4 cloves of finely chopped garlic and heat for 2 minutes until fragrant. Be careful not to burn.
·        Chop your whole Carrot (chopped into thin strips) and half your Onion and add to the garlic and oil tossing throughout this process. Add 3 tablespoons of water and cook for around 2 minutes on a medium to high heat.
·        Add your Chicken Breast and sliced Red Chilli (amount based on personal taste, taste your chilli before you start)
·        Add 3 packets of Udon Noodles and 6 tablespoons of Mae Ploy Sweet Chilly Sauce – cook and regularly toss for a further 4 minutes. Finish with a healthy squeeze of lemon and toss vigorously.
·        Finish with a by topping out onto a large plate and garnishing with remaining Spring Onion.
